A great base to a Keto meal, lean chicken bread, wrapped in smokey bacon.
Ingredients
21 OZ / 600 G chicken breast
7 OZ / 200 G smoked streaky bacon
1 TBSP salt
1 TBSP pepper
90 OZ / 2.5 L water
Directions
Using a piece of heat proof cellophane, lay 3 strips of bacon on top. Season your chicken breast well with salt and pepper. Slice your chicken in half lengthways then lay the chicken on top of the bacon and roll up tightly twisting the ends of the cellophane to create an oblong shape. Repeat with the other chicken breasts.
Place the chicken rolls in a double lock bag carefully submerging in cold water to remove the air. Once the air is out seal the bag. Make sure water does not run into the bag.
Add water and salt to the mixing bowl then heat for 5 minutes / 195°F|90°C.
Add the simmering basket to the mixing bowl then carefully add the chicken rolls in. Be careful not to have any air inside the bag, otherwise the steak will float. Heat again for 80 minutes / 165°F|75°C / speed 1.
Remove the chicken roll from the bag and dry on some kitchen towel. Add to a pan on high heat and char each side for 30 seconds. Take out of pan and allow to rest.
