13.5 OZ / 380 G ripe mango (1 large)
4.5 OZ / 125 G sugar, divided
2 TBSP water
3.75 OZ / 100 ML fresh lime juice, divided
16.25 OZ / 450 ML heavy cream
finely grated zest of 1 lime
Peel the mango and cut off the fruit on either side of the large pit in the center. Add the mango to the mixing bowl.
Add 2 tablespoons sugar, the water, and 1 tables poon lime juice to the mixing bowl. Blend the sauce for 45 seconds / speed 8. Scrape the mango sauce into a small bowl, cover tightly with plastic wrap, and refrigerate.
Add the remaining sugar and the cream to the mixing bowl. With the measuring cup removed, cook for 5 minutes /265°F|130°C / speed 1.
Continue cooking for 5 minutes / 195°F|90°C / speed setting 1. Add the remaining 6 table spoons lime juice and the lime zest, and stir in for 20 seconds / speed 1.
Divide the posset among 6 small custard cups, ramekins, or glasses. Refrigerate until set, at least 4 hours and up to overnight.
Top each serving with a spoonful of the mango sauce. Enjoy your dessert!
