Braised pork shoulder mixed with barbecue sauce and served on mini slider buns with a colorful and flavorful red cabbage slaw.
8.75 OZ / 250 G red cabbage
1 EA carrot
4 EA green onions
3.5 OZ / 100 G mayonnaise
1.5 TBSP cider vinegar
1 TSP sugar
0.5 TSP celery seeds
1.5 TSP fine sea salt, divided
0.25 TSP black pepper
3.5 OZ / 1000 G onion
2 EA garlic cloves
21 OZ / 600 G pork shoulder
18 OZ / 500 ML water or beef broth
1 TBSP smoked sweet paprika
1 TBSP brown sugar
2 TBSP garlic powder
7 OZ / 150 ML preferred barbecue sauce
2 EA slider buns
Cut cabbage into 2.5cm (1-inch) pieces. Cut carrot into 1.25cm (½-inch) pieces. Cut green onions into 5cm (2-inch) pieces.
Add cabbage, carrot, green onion, mayonnaise, vinegar, sugar, celery seeds, ½ teaspoon salt, and pepper to mixing bowl. Chop for 8 seconds / speed 5.
Transfer slaw to a large bowl, cover, and refrigerate until needed. Clean mixing bowl.
Cut onion into quarters, then peel and cut out the root end. Peel garlic. Add onion and garlic to mixing bowl. Chop for 5 seconds / speed 5.
Cut pork into 2.5cm (1-inch) chunks. Add pork, water or beef broth, paprika, brown sugar, garlic powder, and remaining 1 teaspoon salt to mixing bowl.
Cook for 1.5 hours / 195°F|90°C / speed 1 / reverse. Drain in simmering basket, discarding cooking liquid.
Add cooked pork and barbecue sauce to mixing bowl. Shred for 7 seconds / speed 5 until completely shredded.
Pull slider buns apart and fill each with 1 heaping tablespoon pulled pork mixture and 1 tablespoon slaw.
Serve immediately. Enjoy your meal!
