Steamed Pork and Mushroom Dumplings
10.5 OZ / 300 G minced pork
1.5 OZ / 40 G dried shitake mushroom
3.75 OZ / 110 G round cabbage
40 EA dumpling sheets
17.5 OZ / 500 G water
1 TSP salt
2 TBSP soy sauce
0.5 TSP ground white pepper
2 TSP corn starch
2 TSP Shaoxing wine
1 TBSP sesame oil
Put dried shitake mushroom into water. After mushrooms are soak completely, remove the stem and add it to the mixing bowl.
Marinate minced pork with soy sauce, Shaoxing wine, sesame oil, salt, white pepper and corn starch for 15 minutes in an extra bowl.
Chop round cabbage into chunks and add it to the mixing bowl.
Chop mushrooms and cabbage for 5 seconds / speed 6.
Add minced pork to the mixing bowl and combine the ingredients for 1 minute / speed 1 / reverse. Transfer the pork mushroom filling into a large bowl.
Place 1 teaspoon of filling at the center of the dumpling sheet, moisten half of the rim with some water, fold it over and press the edge to seal it.
Clean the mixing bowl and filled with water.
Attach the steamer to the mixing bowl and brush some oil on the steaming trays to prevent sticking.
Place the dumplings in the steamer and cover the lid. Steam for 10 minutes / 250°F|120°C / speed 1.
Serve with Chinese vinegar to personal interest. Enjoy your meal!
