Showcasing pecans in this recipe can give you a lovely sweet after-dinner meal.
Ingredients
2 OZ / 55 G butter
3.5 OZ / 100 G pitted dried medjool dates
5.5 OZ / 150 G pecans
1 OZ / 35 G oat flour
1 TBSP corn syrup
0.5 TSP ground cinnamon
0.5 TSP nutmeg
1 PINCH fine sea salt
Directions
Add your butter to the mixing bowl. Melt for 3 minutes / 195°F|90°C / speed 1.
Cut dates into small pieces. Add the dates, pecans, oat flour, nutmeg, cinnamon, corn syrup and salt to the mixing bowl. Process with the measuring up inserted for 8 seconds / speed 10.
Scrape down the sides of the mixing bowl. Process again for 8 seconds / speed 10.
Use a teaspoon to portion the mixture, then roll each portion into a ball. Coat the balls in extra oat flour if desired.
