This dish maximizes the full flavor of prawns accompanied perfectly with anchovy, chili, garlic and tomato.
10.5 OZ / 300 G tomatoes
4 CLOVES garlic
1 EA chili red
0.5 OZ / 10 G anchovies
2 TBSP fresh parsley
2 OZ / 60 G white wine vinegar
2 OZ / 50 ML olive oil
10.5 OZ / 300 G whole prawn
53 OZ / 1500 ML hot water
9 OZ / 250 G fresh linguini pasta
2 TSP salt
Cut the legs and tentacles then carefully remove the shell and heads from the prawns. Reserve the shells and heads for the sauce. Devein the prawn then slice in half. Cover and put the tails in the fridge.
Add the parsley to the mixing bowl and chop on turbo for 5 seconds.
Remove the parsley from the mixing bowl and clean out the mixing bowl.
Make the prawn oil by adding the shells and heads along with the olive oil to the mixing bowl with the butterfly whisk inserted. Cook for 10 minutes. Once cooked press the cooked heads in the mixing bowl with the spatula to maximize the flavor in the mixing bowl. Remove all heads and shells.
Whilst the prawn oil is cooking prepare the tomatoes by removing the eye, quartering and removing the seeds. Concasse the tomato into small dice. Place into a medium sized bowl.
Using gloves, deseed the red chili and peel the garlic. Add the chili, garlic and anchovy to the mixing bowl, with the measuring cup in place. Chop for 15 seconds / speed 8. Scrape down the sides of the mixing bowl.
Sauté the sauce for 5 minutes.
Add the white wine vinegar to the mixing bowl and cook for 2 minutes. Once cooked empty sauce contents to the concassed tomatoes along with the chopped parsley then reserve for later. Clean mixing bowl.
Add the water and salt to the mixing bowl to preheat for 10 minutes / 250°F|120°C.
Once the water has preheated add your pasta and prawns in to the mixing bowl. Cook for 4 minutes / 250°F|120°C. After cooked strain the pasta and prawn reserving some of the water to loosen the sauce if required.
Add the strained pasta to the tomato mix and toss well adjust the consistency by adding some of the pasta water if required.
