Try these buttery treats with the perfect match of rum and raisin combined with digestive biscuit.
Ingredients
3 OZ / 85 G butter
2 OZ / 50 G raisins
2 OZ / 50 G gold rum
3.5 OZ /100 G digestive biscuit
1 TBSP cocoa powder
Directions
Place your raisins in a small bowl and soak them in the rum overnight.
Add butter to mixing bowl. Melt for 2 minutes / 195°F|90°C / speed 1.
Add your digestive biscuit to the mixing bowl. Process for 8 seconds / speed 6.
Scrape down sides of mixing bowl. Add your raisins and cocoa powder to the mixing bowl. Process again for 10 seconds / speed 4.
Preheat your oven to 180°C / 320°F. Spread your mix onto a lined baking tray and bake for 10 minutes. Allow to cool at room temperature, then place them in the fridge for 20 minutes before cutting them into squares.
Store refrigerated in an airtight container. Enjoy your snack!
