Fluffy and light blinis, perfect as a base for canapes.
Ingredients
3.5 OZ / 100 G all purpose flour
1 TSP sugar
1 EA egg
6 OZ / 180 ML milk
1.5 TSP baking powder
1 OZ / 25 ML vegetable oil
0.5 TSP salt
Directions
Add your egg, salt, sugar, baking powder and flour into the mixing bowl. Mix for 30 seconds / speed 3.
Use spatula to scrape down sides of mixing bowl. Remove the measuring cup then slowly add the milk a little at a time through the hole until smooth. Mix again for 1 minute / speed 4.
Using a nonstick pan over a medium heat, lightly coat the pan with a little bit of the vegetable oil. Pour a small teaspoon of the batter into the pan. After 30 seconds, carefully flip the pancake and repeat the cooking on the other side. Your blinis should be around 2 inch in thickness.
Top your blinis with any kind of toppings such as smoked salmon and cream cheese. Enjoy your meal!
