With Independence day coming up, wow your barbecue guests with this awesome homemade relish.
Ingredients
7 OZ / 200 G onion
9 OZ / 250G tomatoes
5.5 OZ / 150 G sugar
7 OZ / 200 G cider vinegar
7 OZ / 200 G gherkins
1 TSP salt
1 TSP mustard powder
3.5 OZ / 100 G red bell pepper
1 TBSP tomato puree
1 TBSP olive oil
Directions
Peel your onion and quarter. Deseed your pepper and roughly chop. Quarter your tomato.
Add your tomato, onion and pepper to the mixing bowl along with the gherkins and chop for 10 seconds / speed 6. Scrape down the sides of the mixing bowl.
Add your olive oil, mustard powder and salt to the mixing bowl. Sauté your mix for 5 minutes / 265°F|130°C.
Add your vinegar and sugar to the mixing bowl and cook out the relish for 40 minutes / 230°F|110°C / speed 1 / stir with the measuring cup removed.
Enjoy your dish! Allow to cool before serving and keep in the fridge for a month.
