Ingredients
2 EA lamb shank
1 EA carrot
2 EA celery
2 OZ / 60 ML red wine
7 OZ / 200 G onion
4 EA thyme
1 EA tomato
0.5 OZ / 15 G tomato paste
0.5 OZ / 20 G olive oil
42.5 OZ / 1.2 L hot water
1 TBSP salt
1 TBSP black pepper
2 EA bay leaves
0.5 OZ / 20 G cornstarch
2.5 OZ / 70 ML cold water
Directions
Wash all of the vegetables. Season your lamb shank with 1 TSP of salt and pepper.
Cut your carrot, celery, and onion into big chunks. Add them into the mixing bowl. Chop your vegetables for 10 seconds / speed 6. Scrape down the sides of the mixing bowl.
Add olive oil. Sauté without the measuring cup inserted for 7 minutes / 265°F|130°C.
Add your tomato, tomato paste and red wine to the mixing bowl. Cook in sauté mode again without the measuring cup inserted for 3 minutes / 265°F|130°C.
Add water, thyme, bay leaf, remaining salt and black pepper into the mixing bowl. Add the lamb shank into the simmering basket and put it inside the mixing bowl. Cook your stew in steaming mode with the measuring inserted for 1 hour.
Remove the lamb from the mixing bowl and continue reducing the sauce without the measuring cup for 7 minutes / 265°F|130°C in sauté mode.
Once done, blend the sauce with the measuring cup inserted for 10 seconds / speed 7.
Cook again. Mix your cornstarch and cold water, then add it to the mixing bowl through the hole on the lid. Thicken the sauce using the sauté mode for 3 minutes.
Once done, pour the sauce over the lamb and serve. Enjoy your dish!
