2 EA large avocado
4 EA eggs
2 EA lemons
8 OZ / 225 G self-raising flour
8 OZ / 225 G sugar
7 OZ / 200 G icing sugar
Slice the avocado in half and remove the stone. Remove the skin and place the flesh into a small bowl, reserve for later. Juice and zest the whole lemon.
Add eggs and sugar into the mixing bowl. Attach the butterfly whisk and insert the measuring cup, mix for 3 minutes / speed 4.
Add the flour, avocado, zest and juice of a lemon, mix for 2 minutes / speed 4.
Grease a spring form pan with oil and empty the sponge mix into the pan. Bake in a preheated oven at 320°F|160°C for 40 minutes or until cooked. Remove from oven and allow to cool completely before removing from the pan.
Zest and juice the other lemon and add to the mixing bowl along with the icing sugar. With the measuring cup inserted, mix for 30 seconds / speed 3.
Place the cake onto a serving plate and pour over the drizzle mix onto the cake. Garnish with some chopped nuts or berries.
