A great recipe to use up any old bananas you have. Just a great treat for a teatime snack.
Ingredients
4 EA bananas
5.5 OZ / 150 G all-purpose flour
1.5 TSP baking powder
1.5 TSP bicarbonate of soda
0.5 TSP salt
3.5 OZ / 100 G butter
2.5 OZ / 75 G light brown sugar
1 EA egg
3.5 OZ / 100 G walnuts
2.5 OZ / 65 G sultanas
Directions
Add your butter and brown sugar to the mixing bowl. With the measuring cup removed, melt the butter for 3 minutes / 195°F|90°C / speed 2 / stir. Scrape down the sides.
Add your banana, walnuts, egg and sultanas to the mixing bowl. Mix the ingredients with the measuring cup inserted for 20 seconds / speed 4.
Preheat your oven to 180°C / 360°F. Add your flour, salt, bicarbonate of soda and baking powder to the mixing bowl. With the measuring cup inserted, mix the batter for 20 seconds / speed 3 / stir.
Using a 12 inch loaf tin, add a strip of parchment paper in the bottom. Add your batter to the loaf tin and bake for 45 minutes until cooked through.
Enjoy your dish! Any nuts and dried fruits work amazing with this recipe.
