Berliners are similar to doughnuts because they were made of doughnut dough. But, at the same time, unlike doughnuts, they are usually filled with custard or jam, and they don't have central holes!
Ingredients
17.5 OZ / 500 G flour
2 TSP / 11 G dry yeast
5.5 OZ / 150 G sugar
1 EA egg
22 OZ / 620 ML milk
1 OZ / 30 G butter
1 TSP orange zest
2 EA egg yolks
1 TSP vanilla extract
2 OZ / 60 G cornstarch
17.5 OZ / 500 G vegetable oil
2 OZ / 50 G powdered sugar
Directions
Add the flour, dry yeast, 1/3 of the sugar, egg and 1/4 of the milk into the mixing bowl. Knead using the knead mode for 2 minutes.
Add the butter and orange zest into the mixing bowl. Close the lid and knead again using the knead mode for 1 minute. Remove the dough to another bowl, and wrap it with plastic. Ferment the dough for 30 minutes.
Add your egg yolks, the rest of the sugar, vanilla extract, cornstarch and the rest of the milk into the mixing bowl. Close the lid and mix with the measuring cup removed for 15 minutes / 250°F|120°C / speed 2. Let your pastry cream cool down and transfer it into a pastry bag.
Sprinkle a little flour over a surface and roll the dough to a thickness of 1.5 cm (0.6 inch). Cut the dough with a round cutter (8 cm or 3 inches in diameter). Let sit over a surface or sheet tray for 10 minutes.
TIP: Do not forget to cover it with plastic so that the shaped dough does not dry.
Heat your vegetable oil and deep fry the berliners for 2 minutes on each side.
Insert the pastry tip into one side of the berliners and fill with custard.
Sprinkle powdered sugar on top. Enjoy your dessert.
