There's nothing quite like a bowl of warm, comforting soup on a chilly evening, and cauliflower and potato soup is the perfect choice. Made with nutritious cauliflower and tender chunks of potatoes, it's a healthy and satisfying meal with the perfect creamy texture.
Ingredients
1 OZ / 30 G butter
2 OZ / 50 G onion
17.5 OZ / 500 G cauliflower
10.5 OZ / 300 G potato
21 OZ / 600 ML vegetable stock
3.5 OZ / 100 ML cream
1 PINCH salt
1 PINCH white pepper
Directions
Prepare the cauliflower by washing and cutting it into florets. Add them to the mixing bowl. Chop with the measuring cup inserted for 15 seconds / speed 7. Remove from the mixing bowl and set aside for later.
Peel your onion and quarter. Add them to the mixing bowl. Chop for 10 seconds / speed 6.
Add the butter to the mixing bowl. Sauté with the measuring cup removed using the sauté mode for 5 minutes / 265°F|130°C. While the onion cooks, wash and peel your potato then cut it into chunks.
Add your stock, potato and cauliflower to the mixing bowl. Cook with the measuring cup inserted for 25 minutes / 230°F|110°C / speed 2 / stir.
Add salt, white pepper and the cream to the mixing bowl. Blend the soup for 30 seconds / speed 10.
Pour the soup to the bowl, garnish with some parsley and more cream. Enjoy!
