Cod and Nutmeg Brandade
42 OZ / 1200 G salted cod fillet or fresh cod
1.75 OZ / 50 ML olive oil
1.75 OZ / 50 ML milk
2 EA average sized potatoes
2-3 EA garlic clove
1 PINCH grated nutmeg
1 PINCH pepper
24 OZ / 700 ML water
croutons and black olives for garnish
Soak the salted cod in a large amount of cold water for 12 hours.
Place the cod fillets, 200 ML water and milk in mixing bowl. Cook for 10 minutes / 212°F|100°C / speed 1 / reverse, and then allow to rest for 10 minutes.
Take the fish out of the mixing bowl and remove the skin. Reserve the cooking liquid.
Pour 500 ML water into the mixing bowl. Cook the potatoes in the simmering basket for 25 minutes / 212°F|100°C / speed 1. Empty the mixing bowl and wash.
Chop the garlic with TURBO button for 3 seconds. Use spatula to scrape down sides of mixing bowl.
Add olive oil and sauté for 3 minutes / 212°F|100°C / speed 1.
Add the potatoes with 2 tablespoons cooking liquid and mix for 10 seconds / speed 5.
Add the fish and nutmeg then mix again for 40 seconds / speed 3. If necessary, add some cooking liquid using the opening on the lid. Season with pepper.
Serve the cod brandade hot with croutons and black olives. Enjoy your dish!
