Ingredients
3.5 OZ / 100 G pumpkin seeds
2 OZ / 60 G peanut
3 OZ / 80 G italian lettuce
5.5 OZ / 150 G spinach
1 EA scallions
2 TSP parsley
2 TSP cilantro
1 EA serrano pepper
0.5 TSP cumin
1 TBSP salt
17.5 OZ / 500 G tomatillo
2 EA garlic clove
2 OZ / 50 G onion
17.5 OZ / 500 ML water
14 OZ / 400 G chicken (legs and thighs)
2 TSP / 10 G pumpkin seeds (decoration)
1 TSP / 5 G sesame seeds (decoration)
Directions
Remove the tail of the serrano pepper. Add pumpkin seeds, peanuts, lettuce, spinach, scallion, serrano pepper, parsley and cilantro into the mixing bowl. Close the lid and blend in turbo mode for 50 seconds with the measuring cup inserted. Scrape down the sides of the mixing bowl.
Cut onion into quarters. Peel garlic cloves.
Add tomatillos, garlic cloves, onion, cumin and 1 TSP of salt into the bowl. Chop and mix in turbo mode for 1 minute 30 seconds with the measuring cup inserted. Scrape down the sides of the mixing bowl.
Add water and the chicken to the mixing bowl, then season with the remaining salt. With the measuring cup removed, cook for 30 minutes / 195°F|90°C / speed 1 / stir.
On a deep plate, serve a few pieces of chicken and a generous amount of green mole. Decorate with pumpkin seeds and sesame seeds.
