Avocados brown easily, so proper storage is key for maintaining its freshness. Place guacamole in an airtight container, and use a spoon to flatten the surface and remove any air pockets. Cover the surface of the guacamole completely with about half an inch of water, and cover tightly with an airtight lid. Refrigerate and eat within 2 days.

1.75 OZ / 50 G red onion
1 CLOVE garlic
10.5 OZ / 300 G avocado
0.5 TBSP lime juice
1 TSP chili paste
1 PINCH salt
1 PINCH pepper
Wash, quarter and deseed the tomatoes. Add to mixing bowl and chop for 8 seconds / speed 5. Transfer to another bowl and set aside.
Peel the onion and the garlic clove, halve the onion, add to the mixing bowl and chop for 7 seconds using Turbo button. Use spatula to scrape down the sides of the bowl.
Add avocado, lime juice, chili paste, salt and pepper and mix everything together for 9 seconds / speed 6.
Use spatula to scrape down the sides of the bowl. Add chopped tomatoes and mix for 10 seconds / speed 2 / reverse.
Transfer guacamole into a dish, season again with salt and pepper and serve.
