This no cook hummus dish is ready in minutes. Goes perfectly with pita breads.
Ingredients
3.5 OZ / 100 G untreated orange
2 SPRIGS flat leaf parsley
9.5 OZ / 265 G canned chickpeas
2 OZ / 60 G Tahini
2 OZ / 50 ML cold vegetable stock
2 TBSP lemon juice
1.5 OZ / 40 ML olive oil
0.5 TSP salt
1 PINCH pepper
0.5 TSP cumin
Directions
Rinse the orange in hot water and zest the peel.
Wash the parsley, shake dry. Chop roughly for 5 seconds / speed 10. Add the parsley into the mixing bowl.
Drain the chickpeas in a sieve until all the liquid has run off.
Add chickpeas, tahini, cold vegetable stock, lemon juice, olive oil, salt, pepper, cumin and orange peel into the mixing bowl. Insert the measuring cup and mix for 2 minutes / speed 6.
Drizzle the remaining olive oil on top, sprinkle with the parsley and serve.
