When you are up for a spicy challenge, let's try this upgraded level of our meatball recipe. With similar ingredients, you can make the cheesy version for your kids too!
Have a taste of this hot Mexican dish with ground pork, ground beef, tomatoes and a slight kick from the chipotle, all bounded together with breadcrumbs and egg.
Ingredients
4 EA garlic cloves
2 OZ / 50 G cilantro
1 EA yellow onion
9 OZ / 250 G lean ground beef
9 OZ / 250 G ground pork
2 OZ / 50 G breadcrumbs
1 EA egg
2 TSP fine sea salt
2 TSP black pepper
3 EA chipotle in adobe
2 TBSP olive oil
28 OZ / 800 G canned tomatoes
2 TBSP tomato puree
1 TBSP sugar
5.5 OZ / 150 G frozen peas
Directions
Peel 2 garlic cloves. Pick cilantro leaves from the stems. Add garlic, cilantro and half of the onion to the mixing bowl. Chop for 8 seconds / speed 6. Scrape down the sides of the mixing bowl.
Add your ground beef, pork, breadcrumbs, egg, 1 teaspoon of salt, 1 teaspoon of pepper and half of the tomato puree to the mixing bowl. Mix your filling for 30 seconds / speed 4. With lightly dampened hands, shape the mixture into 16 balls and arrange them into the steaming trays. Wash and dry your mixing bowl.
Peel the remaining garlic clove. Add the garlic, remaining onion, and oil to the mixing bowl. Chop with the measuring cup inserted for 6 seconds / speed 6. Scrape down the sides of the mixing bowl.
Add your chipotle into the mixing bowl. Remove the measuring cup and sauté for 4 minutes / 250°F|120°C. Scrape down the sides of the mixing bowl.
Add the tomatoes, remaining tomato puree, sugar, remaining salt and pepper to the mixing bowl. Add the peas onto the shallow steaming tray, then place it on top of the deep steaming tray. Attach the steaming sets to the mixing bowl, then cook using the steaming mode for 15 minutes.
Carefully remove both of the steaming trays and set aside. Place the lid back onto the mixing bowl with the measuring cup inserted. Purée the sauce for 6 seconds / speed 6.
Serve the meatballs and peas with the sauce. Enjoy your meal!

Make sure to use ground pork with at least 20% fat content for juicy meatballs.
