Spice up your day with Tortilla Soup. This soup is not just any ordinary soup, it's a soup that's so good that you'll want to swim in it! With its tantalizing mix of spices, juicy chicken, and fresh veggies, Tortilla Soup is sure to warm both your belly and your soul.
Tortilla soup is made of a concentrated liquid of dried peppers, tomato and spices. It is garnished with fried tortilla strips, cream, cheese and avocado. Once it Is served, add lime juice for an extra kick.
2 TBSP vegetable oil
1.5 TSP garlic clove
2 OZ / 50 G onion
28 OZ / 800 G tomatoes
3 OZ / 80 G fresh pasilla peppers
3.5 OZ / 100 G fresh guajillo peppers
26.5 OZ / 750 ML chicken stock
1 SPRIG cilantro
2 TBSP salt
0.5 TSP pepper
14 OZ / 400 G tortilla chips (stripes)
2 OZ / 60 G sour cream
3.5 OZ / 100 G fresh cheese (cubes)
3.5 OZ / 100 G avocado slices
Peel and roughly chop the onion. Quarter your tomatoes, then peel the garlic.
Add the vegetable oil, garlic, onion, pasilla, tomatoes and guajillo peppers into the mixing bowl. Sauté using the sauté mode for 10 minutes / 250°F|120°C.
Add 9 OZ / 250 ML of chicken stock, cilantro, salt and pepper. Blend with the measuring cup inserted for 2 minutes / speed 7.
Add the rest of the stock. Cook the soup with the measuring cup inserted till the flavors come together for 14 minutes / 212°F|100°C / speed 3 and check the seasoning at the end.
Serve the soup with some stripes of tortilla chips. Garnish with sour cream, fresh cheese and avocado.
