Ingredients
8 OZ / 225 G all-purpose flour
6.5 OZ / 180 G butter
3 OZ / 75 G sugar
2 OZ / 50 G desiccated coconut
3.5 OZ / 100 G rolled oats
2 OZ / 50 ML golden syrup
1 TSP baking soda
Directions
Add your butter and syrup to the mixing bowl. Melt your butter for 3 minutes / 195°F|90°C / speed 2. As soon as your butter is fully melted, add your baking soda. This will make the mix becomes frothy.
Add flour, coconut, oats and sugar into the mixing bowl. Combine the flour with the butter mix for 45 seconds / speed 3. Remove from the mixing bowl onto a floured surface.
TIP: If your cookie dough is too soft to handle, place it in the fridge for 30 minutes.
Preheat your oven to 180°C / 360°F. Portion your cookie dough into roughly 24, and then roll it into a ball. Flatten slightly, then place them onto 2 lined baking trays, allowing each some space while it bakes. Bake for 15 minutes.
