Have a taste of the this tasty soup, with nutty flavors of arugula, crunchy celery, and vegetable stock that makes you feel very healthy. This soup has all the nutrients you need with pototatoes for your carbs intake!
Ingredients
0.5 OZ / 20 ML olive oil
3.5 OZ / 100 G onion
2 OZ / 50 G celery
5.5 OZ / 150 G potato
5.5 OZ / 150 G arugula
24.5 OZ / 700 ML vegetable stock
1 PINCH salt
1 PINCH pepper
Directions
Wash and peel your onion and potato, then roughly chop. Add both to the mixing bowl along with the celery. Chop for 5 seconds / speed 5.
Add the olive oil to the mixing bowl. Sauté the vegetables using the sauté mode for 5 minutes.
Add the stock to your mixing bowl. Cook using the sauté mode with the measuring cup in place for 20 minutes / 230°F|110°C / speed 1 / stir.
Wash the arugula well and dry it with a salad spinner or paper towel.
Add the arugula, white pepper and salt. Cook again with the measuring cup inserted for 2 minutes / speed 10. Serve immediately to avoid discoloration of the soup or immediately cool in an ice bath to make the soup in advance.
