Make use of the leftover pumpkin with this pumpkin three ways recipe. Only attempt this recipe if you are an expert!
Ingredients
26.5 OZ / 750 G pumpkin flesh
2.5 OZ / 70 G baby spinach
1 TSP garlic powder
1 TBSP olive oil
2 TSP cumin
3 OZ / 80 ML vegetable stock
5.5 OZ / 150 G pasta dough
2 TSP salt
1 TSP pepper
17.5 OZ / 500 ML water
2 OZ / 50 ML cream
53 OZ / 1500 ML hot water
1 OZ / 25 G pumpkin seeds
2 OZ / 50 G pea shoots
3.5 OZ / 100 G cream cheese
Directions
Prepare your pumpkin by chopping it into cubes, about half an inch in size. Place them on the steaming tray and then season with salt, pepper and cumin. Add your water to the mixing bowl and steam your pumpkin for 12 minutes. Once cooked, reserved for later.
Add your garlic powder and olive oil to the mixing bowl along with your spinach. Sauté your spinach using the sauté mode for 5 minutes.
Add 3.5 OZ / 100 G of your cooked pumpkin and cream cheese to the mixing bowl and mix together for 15 seconds / speed 4. Once finished, remove from the mixing bowl and clean out the bowl well.
Roll the pre-made pasta thinly and cut the pasta into 2-inch squares, then place a generous amount of filling in the middle. With some water to seal around the outside of the pasta, fold over to create a triangle, pushing the air out to avoid it opening up during cooking. Place your finger in the middle and bring the ends together around your finger. Put your pasta in the fridge for later use.
Add 10.5 OZ / 300 G of your cooked pumpkin to the mixing bowl along with your stock and cream. Cook your puree for 5 minutes / 250°F|120°C / speed 1 / stir. Scrape down the sides.
Adjust the seasoning then blend your puree with the measuring cup inserted for 30 seconds / speed 8. Empty from the mixing bowl and keep it warm. Clean out the mixing bowl very well.
Add your hot water to the mixing bowl with a little salt and preheat your water using the sauté mode for 5 minutes.
Once your water is heated up, place your remaining pumpkin carefully on the deep steaming tray to warm up. Add your tortellini into the mixing bowl then attach the deep steaming tray. Cook your pasta on sauté mode for 3 minutes. Once cooked, serve your tortellini with the puree and cooked pumpkin. Garnish with some pea shoots and pumpkin seeds.
