Creamy mac and cheese with a zesty buffalo sauce and shredded chicken.
Ingredients
70.5 OZ / 2000 ML water
8.5 OZ / 240 G dry macaroni
2 TBSP kosher salt, plus more to taste
17 OZ / 480 G boneless, skinless chicken breast
10.5 OZ / 300 G whole milk
1 OZ / 30 G butter
2 OZ / 60 G buffalo wing sauce
0.5 TSP black pepper
0.25 TSP smoked paprika
0.25 TSP ground mustard
4 OZ / 120 G shredded Cheddar cheese
4 EA American cheese slices
Directions
Cut chicken into 1-inch cubes.
Add water and kosher salt to mixing bowl. Heat for 10 minutes / 230°F|110°C / speed 1.
Add dry macaroni to the simmering basket in the mixing bowl. {scale} Place chicken in both the steaming trays attached to the mixing bowl. Cook for 8 minutes / 250°F|120°C / speed 1. Once cooked remove the trays and drain the pasta. Reserve for later.
Add milk, butter, black pepper, smoked paprika, and ground mustard to mixing bowl. Reattach the steaming trays and cook for 3 minutes / 230°F|110°C / speed 1.
Add shredded cheddar cheese and American cheese slices to mixing bowl. Reattach the steaming trays and cook for 3 minutes /195°F|90°C / speed 1.
Add buffalo wing sauce and cooked chicken, reserved pasta and cooked chicken. Cook for 2 minutes / 195°F|90°C / speed 1 / stir.
