Coconut-Covered Date and Cashew Bites

These lightly sweet, energy-packed bites are the perfect snack to keep you going after an intense workout.
Ingredients

2 OZ / 55 G coconut oil

3.5 OZ / 100 G pitted dried Medjool dates

5.5 OZ / 150 G raw cashews

2 OZ / 50 G unsweetened shredded coconut, plus more for coating

2 TSP agave syrup

0.5 TSP ground cinnamon

0.5 TSP vanilla

1 PINCH fine sea salt
Directions
Add coconut oil to mixing bowl. Melt for 1 minute / 175°F|80°C / speed 1.
Cut dates into 1.25cm (½-inch) pieces.
Add dates, cashews, coconut, agave, cinnamon, vanilla, and salt to the mixing bowl.
Process for 8 seconds / speed 10.
Scrape down sides of mixing bowl. Process for 8 seconds / speed 10.
Use a teaspoon to portion the mixture, then roll each portion into a ball.
Roll the balls in shredded coconut.
Store refrigerated in an airtight container.
